This book was not at all what I was expecting. I wanted to find out how to easily dehydrate foods; this book has very complicated ways to accomplish this. According to this book, all foods must be cooked in some manner before dehydrating. Maybe for extremely long term storage, but I am a beginner at dehydrating, and am not looking to put food up for Armageddon; just for snacks and such. I am looking elsewhere for my recipes. After researching dehydrators, I purchased a Nesco Gardenmaster which was within my budget but probably outside of my skill set. Many reviews of every appliance that I researched cautioned that dehydrating was not so easy as chopping and putting food in a dehydrator for hours on end. The Idiots Guide was suggested as an addition to my Nesco purchase and since I’m the poster child for the book title I purchased it too. I can’t express how glad I am that I did! Jeanette Hurt is exceptional in her ability to keep the reader interested in some of the arduous tasks of food dehydration by providing interesting facts and historical context. She’s infectious with her enthusiasm, including the very practical reasons for taking the time to dehydrate food. With every suggestion for the use of fairly inexpensive food we might otherwise throw away, I became more interested, and knew that my purchase wouldn’t sit on a shelf. The next morning, I started with some easy things like apples, bananas, and fruit leather. Although I used a jar of unsweetened applesauce I had in the pantry, it turned out fantastic! I’ll need to get better with cutting my food more proportionately and at Jeanette’s suggestion, I will definitely be purchasing a mandolin. I was really surprised that my end product was a big hit with my grandsons. It will be a long time before they can do more than help me fill racks but if I can make healthier snacks, better tasting food, and save money with my Nesco, and the knowledge packed in Jeanette Hurt’s books then I will have made a very wise investment.
